St. Tola Goats Cheese
St Tola Goats Cheese has been made in the townland of Inagh, just south of the Burren of Co Clare since the late 1970’s. At St Tola Goats Cheese, we believe passionately in sustainable farming; farming that is as near to nature as possible.
We work on long term principles and methods which co-exist with natural systems and help protect and enhance our local environment. We are one of the few Irish goat cheese makers, that use the milk from our own family herds of goats.
To ensure the superior quality of the cheese, our skilled cheese makers still hand-make all our cheese in small batches on a daily basis. This ensures St Tola’s unique character and distinctive flavours and reflects the pure clean environment in which it is made. We could automate much of our process but this would mean compromising on quality. Gentle handling of the curd insures that we get the well-known unique and distinctive texture for our range St Tola soft cheeses. No additives or preservatives are added and we use minimum amount of salt; all resulting in a range of truly artisan cheeses.
